Hawaiian history makes a great read - worth picking up any good book (before and after your trip). The arc of how they navigated from Polynesia / Micronesia / Tahiti etc and discovered Hawaii, how their entire culture didn't have metal, how their class-based society operated and how they got unified is all very fascinating.

King Kamehameha has a "the Great" suffix. His history and unification is worth reading - he deserves this this suffix! Definitely visit the Place of Refuge and Pu`ukoholā Heiau National Historic Site (U.S. National Park. James Cook's memorial is another place to go - but a long hike and may generate mixed feeling, given what he did to native Hawaiian (he was eventually killed by them).
